Cancer Protective Asparagus Wraps

In today's video, I share one of my favorite recipes! It's full of anti-inflammatory, antioxidant rich, cancer protective ingredients! It is quick and eash to prepare.

Asparagus Wraps

Anti-inflammatory, Anti-oxidant Rich and Cancer Protective! In today's video, I share one of my favorite recipes! It’s full of anti-inflammatory, anti-oxidant rich, cancer protective ingredients! It is quick and easy to prepare – just snap the ends off the asparagus, slice the tomatoes in half and slice the onion and pop in the oven and carry on with life! This is a great meal if you are looking for a vegetarian option. It can be made with a gluten-free or whole grain tortilla These ingredients reheat well which makes for good left overs – something I love!


Makes about 4-5 wraps.

Ingredients 1-1.5 c cherry tomatoes, sliced in half

1 red onion, sliced into 6-8 slivers depending on size (don’t cut the slivers too thin or they will get overly brown)

1 bunch of asparagus

½ c extra virgin olive oil

4-5 whole grain tortillas (rice, whole wheat or gluten-Free)

Toppings

Fresh or dried oregano to taste

4-5 oz of crumbled Feta or Goat Cheese – (1 oz per serving)

½ c walnuts

Directions:

1. Preheat the oven to 400.

2. Line 3 baking sheets with parchment paper.

3. Prepare tomatoes, spread onto baking sheet and brush with olive oil. Place in oven for 45 -50 min until lightly charred.

4. Prepare onion, spread onto baking sheet and brush with olive oil. Place in oven for 45 min. until lightly charred. These usually take a little less time than the tomatoes.

5. Prepare the asparagus, snapping off and discarding the ends. Spread on to baking sheet and lightly brush with olive oil. Bake for 11 minutes.

6. Assemble wraps on tortillas starting with asparagus, then onion and tomato. Sprinkle with feta, walnuts and oregano. Serve warm.

7. Store any remaining vegetables together in the refrigerator for 3-4 days.
