After a trip to the nursery, where I found Basil and Marjoram plants, I was inspired to make this delicious and easy to make Raw Tomato Basil Soup! It's packed with cancer protective ingredients and only takes a few minutes to assemble and blend in the Vitamix. (Note: other blenders or food processors may be used.) The herbs, garlic and lemon juice make this flavorful now (early spring)- you may add sun dried tomatoes or spinach as well roasted pine nuts as a garnish for some variations.
Tomato Basil Soup
Prep time: Less than 10 minutes.
This recipe serves 1
1 c tomatoes 1 lemon, juiced
1 T olive oil
3/4 t onion powder
1 clove garlic, peeled
1/2 avocado (or a whole avocado if small)
5 basil leaves (or more to taste) or 1/2 t dried
Leaves from 1-2 sprigs of marjoram or 1/2 t dried
Salt and pepper to taste
Blend in food processor or blender. Serve raw.
This soup is best enjoyed immediately after blending.
