People often ask what foods they should eat to protect against cancer. In today's video, I share a wonderful hummus recipe that's packed with nutritious ingredients to protect against cancer.
I'm Mary Johnson, a Registered Dietitian. In this video I share my recipe for a powerfully packed snack to prevent cancer.
This recipe combines 2 of my favorite things - hummus and the ingredients for pesto and is a delicious way to incorporate beets into the diet - even if you don't consider yourself a fan!
Beet and Basil Hummus
Ingredients
2 medium beets
½ cup dried or 1 15 oz can of garbanzo beans (also known as chickpeas)
¼ c tahini (tahini is made from sesame seeds)
¼ c walnuts
1 T olive oil 8 -10 basil leaves or 1 ½ t of dried basil
3 cloves garlic
Up to ¼ c water retained from cooking beans
Juice from 1 medium lemon, about ¼ c
Directions
Prepare Beans (if using dried beans)
1. Soak beans in a large bowl of water overnight (approximately 8 hours)
2. Drain water from beans following soaking and simmer for 1 hour
3. Drain beans following cooking and retain ¼ c of the water
Prepare Beets
1. Preheat oven to 400 degrees.
2. Scrub beets (do not peel them) and wrap in parchment paper
3. Roast beets in oven for approximately an hour until beets are tender
4. Once cooled, skin can be removed with fingers under running water or with a potato peeler
Prepare Hummus Assemble all ingredients, except for the water retained from cooking beans, in a blender or food processor. Blend until smooth, adding water until hummus is the desired consistency. Chill and serve.
