April 4th is International Carrot Day! I wonder if it's just coincidence that it falls the week leading up to Easter!? The Easter Bunny has to fuel up for the big day after all! šŸ„• šŸ° šŸ„•

For those who are looking to increase their vegetable intake, carrots are a great choice! They are rich in anti-oxidants and Vitamin A which supports vision, immune health, growth and development as well as reproductive health. They are versatile, easy to keep on hand (you can store them in the crisper for several weeks) and make an easy, delicious snack with hummus. I frequently use them when making a stir fry or salad. Many soups call for carrots along with celery and onions.
