Whether it’s for work or school, prevent brown bag boredom with easy-to-make, healthy lunch ideas. I love fresh rolls with veggies and tofu with peanut sauce and mint. Try a whole-wheat pita pocket with veggies and hummus or a low sodium vegetable soup with whole grain crackers or a salad of mixed greens and a hard boiled egg. Got left overs? Try repurposing them for lunch. Your taco Tuesday becomes a taco salad on Wednesday when you add greens, a few tortilla chips and top with salsa, guac and a dollop of sour cream. Roasted veggies such as asparagus, tomato and red onion become a wrap with a whole wheat tortilla, a few walnuts, a dash of oregano and a garnish of feta cheese. Yum!
